Squab Salad

	various wild * mushrooms

	various lettuce

	 * quail eggs


Preheat oven to 450 degrees. Season squab breasts with salt and pepper. Saute in clarified butter approximately 2 minutes per side. Place in oven till pink. Season various wild mushrooms (enoki,chanterelles,oyster,shitake) with salt and pepper and saute till soft. Mix various greens (belgian endive, curly endive, green beans, watercress) in bowl and add vinegarette dressing. Place squab on top of mushrooms. Degrease squab pan with vinegar, add chicken stock and let cook for several minutes. Add chives. Fry quail eggs. Place salad on plate. Slice squab breasts and place on top of salad. Surround with mushrooms. Put 3 eggs on each plate. Top with sauce.
