Tuscan White Bean Salad

 Light and easy to make.

2	15 oz. can white beans, drained
1	cup parsley, chopped
1	tomato, medium, chopped 
5	tablespoons olive oil, extra virgin
3	tablespoons lemon juice, fresh squeezed
5	cloves garlic, fresh, minced
1/2	tablespoon kosher salt, or to taste
1/2	teaspoon fresh cracked pepper, or to taste
	


Mix all ingredients, taste for seasonings. Recipe may be doubled, though be careful with the salt. Best if served at room temperature.

Actual recipe calls for making a dressing and adding dry mustard to the dressing
