Mojito

MAKES 1 DRINK
1 1/4 ounces (less than 1 jigger) simple syrup (see Note)
4 mint leaves
1 1/2 ounces (1 jigger) light rum
1 lime, quartered 1/4 cup of soda water

1. Muddle (crush with a muddler, pestle or wooden spoon), simple syrup and mint leaves in the bottom
of a highball glass.

2. Add rum and juice of three lime wedges, then squeeze the remaining lime wedge into the drink and
drop in.

3. Fill glass with ice and top with soda water.

Note: To make simple syrup, combine equal amounts of water and sugar in a saucepan and heat
through until sugar dissolves. Syrup will keep, chilled, for several days.

Caipirinha

MAKES 1 SERVING
1 lime, quartered

1 to 1 1/2 spoonfuls of sugar
2 ounces ( 1/4 cup) cachaca

1. In a metal shaker, muddle the lime wedges and sugar.

2. Add cachaca and enough ice to fill a large rocks glass and shake vigorously.

3. Pour entire contents of shaker into glass and serve.
