Granny's Baked Cheese Grits

5 cups water
1 cup milk
2 tsp salt
1 1/2 cups uncooked grits
3/4 cup butter
3 eggs, slightly beaten
1 tsp dried savory
1 # sharp cheese, grated

Bring water, milk and salt to the boil and slowly add grits.  Cook 5 minutes
and cool.  Stir in the butter.  Add eggs and grated cheese and mix well.
Pour into greased 2-quart casserole.  Bake 250 degrees for 1 hour and 10
minutes.  Serves 12 regular folks...or 4 Cajuns, depending on what kinda
hunger they got on 'em.

They're much more better than good, I garontee!

This was tonight's side dish and it was utterly delicious. I only had a
little as I am still following the moderate low carb thing. It was
incredible. In the old days, I would've eaten 2 servings. Large servings.

   1 1/2  cups          lowfat milk
   1      clove         garlic -- minced
     3/4  tsp           salt -- divided
     1/2  cup           quick-cooking grits
     1/4  cup           blue cheese -- crumbled
   2      tbsp          butter -- cubed
     1/4  cup           heavy cream
     1/4  cup           egg substitute
   1                    egg white -- lightly beaten
   2      tbsp          Blair's Jalapeno Death -- or other green sauce
   1      tbsp          parmesan cheese
   1      tsp           dried basil
   1      tsp           dried thyme
     1/8  tsp           black pepper

In a saucepan, bring milk, garlic and 1/2 tsp salt to a boil. Gradually stir
in grits. Cover, reduce heat, and simmer for 10 minutes, stirring
occasionally.

Whisk in blue cheese and butter until melted. Add 1/4 tsp salt, heavy cream,
and remaining ingredients; pour into a lightly greased 1-1/2 qt souffle
dish.

Bake at 350F for 45 min-1 hour. The center will be slightly soft.

Serve with catfish and cole slaw.
