Dahl or dal is used for lots of different legumes.   In Indian
cookery, there are lots of different dals cooked with spices
and they accompany most of the main dishes.  Here is our favorite:

Dal

3/4 cup brown lentils
1/4 cup red lentils
4 and 1/2 cups water
1 tsp turmeric
1/4 tsp cayenne
1/2 onion, minced
2 cloves garlic, minced
4 serranos, chopped
1 and 1/2 inch gingerroot, minced

Simmer until beans are cooked- 45 minute to 1 hour.
Add salt to taste.  Thicken with a roux of 2 Tb chick pea
flour and 1 Tb butter.  
Pop 2 tsp black mustard seeds and 1 tsp cumin seed in 2 Tb
oil.  Add 1/4 tsp hing, 8-10 curry leaves
Add to beans
Add juice of 1/2 lemon and top with chopped cilantro.
