Carpaccio:

Carpaccio is quite easy to prepare, but you need to use first quality
ingredients.

Semi-frozen prime filet so it is easy to slice thin
Extra virgin olive oil
Cracked black pepper
Lemon slices
Parmigiano-Reggiano
Kosher or coarse sea salt
Arugula or any type of slightly bitter greens

Slice the meat as thin as possible, paper thin is perfect and layer on a
plate, slightly overlapping.
Grind coarse pepper, coarse salt on meat, in moderation.
Shave Parmigiano-Reggiano with a cheese slicer or vegetable peeler onto
meat.
Lightly coat with olive oil.
Squeeze lemon juice on meat.
Garnish with lemon slices and arugula.

Serve with crusty bread.
