STEAK BUTTER RECIPES (Plus 5)

Flavored butter makes a rich sauce for simple grilled foods.

Serve a slice or 2 on top of steaks, chops, fish or vegetables
to melt and combine with the hot juices.

For a pouring sauce warm the butter over the grill.

Most flavored butters will keep for 1 week in the refrigerator.
Most flavored butters will keep for 3 months in the freezer.

Shape the butter into a roll, pipe from a pastry bag with a
decorative tip, or make a large patty and cut with cookie cutters
for decorative shapes.  Wrap in plastic wrap to store.

Max's TIP: " Put it in plastic wrap, roll it up into a cylinder, and
store it in the freezer.  That way, when you want some,
you just slice off a couple of  'coins.' "

If you're not using steak butter, you should be.

Put a dab on any steak just before or after you take
the steak(s) off the grill.

AND !:

1) It can be used in place  of what ever you use when you
make garlic bread -

2) It's great on a baked potato.

                INGREDIENTS
                ===========

1 cup parsley  chopped fine
7 oz shallots  chopped fine
1 tablespoon tarragon
juice from one fresh lemon
1 tablespoon cayenne pepper
1 package unsalted kosher butter soft, but not melted
1 tablespoon Garlic oil more if you like
1 tablespoon black pepper

Mix all of this together with a food processor.

Store in the fridge.

                 - OR -

Put it in plastic wrap, roll it up into a cylinder, and
store it in the freezer.  That way, when you want some,
you just slice off a couple of "coins."

And it keeps longer, too.

               GREEN PEPPERCORN BUTTER

1 stick of Sweet Cream Butter (unsalted) - Softened
4 Tb or more of green peppercorns (they come brined in jars)

In a mortar & pestle, crush the green peppercorns coarsly.
Add to the butter and mix.
Really yummy on steaks !

                       BLEU CHEESE BUTTER

1 stick of Sweet Cream Butter (unsalted) - Softened
3 or 4 oz of Blue Cheese, crumbled

Mix both together and serve on steaks.

Enjoy !

                     CILANTRO AND GREEN CHILI BUTTER

1/2           cup  sweet butter -- softened
1/4           cup  fresh cilantro -- chopped
   3           scallions -- thinly sliced
   2           cloves  garlic -- minced
1/4          green chili pepper -- minced
   1          dash  lime juice
   1          dash  hot sauce -- optional
   1          pinch  lime zest -- grated
               salt and pepper -- to taste

Yield:   "1 cup"

             RASPBERRY AND SMOKED GARLIC BUTTER

Stu: "This one is a favorite of mine on chops"


   6           cloves  smoked garlic
1/2           cup  sweet butter -- softened
25            fresh raspberries -- mashed
   1           dash  raspberry vinegar
                 salt and pepper to taste


Yield:   "1 cup"

                            ORANGE HONEY BUTTER

Stu:  "Good on fresh hot bread or muffins"


      1/2         pound  sweet butter
   1 1/2         pounds  honey
   5 3/4         ounces  light brown sugar
      1/4         teaspoon  cinnamon
   2 1/8         tablespoons  brandy
      3/8         teaspoon  lemon zest -- grated
   3               teaspoons  orange zest -- grated


Combine butter, honey, brown sugar, and cinnamon in a mixer bowl.

Process at medium-low speed until well blended and fluffy.

Add brandy, lemon zest, and  orange zest.

Mix well spoon into a pastry bag, fitted with a large star tip.

Pipe rosettes onto parchment or waxed paper.

Chill until firm serve slightly chilled or at room temperature

                           Hazelnut Steak Butter

      1/2           cup  butter or margarine
      1/4           cup  Oregon hazelnuts -- chopped
   1 1/2      teaspoons  chopped chives
      1/4      teaspoon  Tabasco sauce

Melt 2 tablespoons of the butter; add hazelnuts and saut until lightly 
brown. Turn into small bowl and cool thoroughly. Add the remaining butter, 
chives and Tabasco. Beat until creamy. This is enough butter to serve with 
6 hamburgers or 4-6 steaks.

BASIC SHALLOT BUTTER

1/2 CUP UNSALTED BUTTER, SOFTENED
DASH OF LEMON JUICE
2 SHALLOTS, FINELY CHOPPED
SALT AND BLACK PEPPER

COMBINE ALL THE INGREDIENTS WELL, THEN EITHER SERVE AT ROOM TEMPERATURE OR CHILL AND SLICE.  PLACE ON THE HOT FOOD AND ALLOW IT TO MELT AND BLEND IN.

VARIATIONS:  
TARRAGON BUTTER:  ADD 2 TSP OF CHOPPED FRESH TARRAGON TO THE BASIC SHALLOT BUTTER.
FRESH DILL BUTTER:  DILL BUTTER IS EXCELLENT WITH GRILLED SALMON.  ADD 2 TSP OF CHOPPED FRESH DILL TO THE BASIC SHALLOT BUTTER.

HAZELNUT BUTTER

1/2 CUP UNSALTED BUTTER, SOFTENED
3 SHALLOTS, CHOPPED
4 TABLESPOONS CHOPPED HAZELNUTS, TOASTED
1-2 TSP PEAR, CIDER OR RASPBERRY VINEGAR
SALT AND BLACK PEPPER

MIX THE BUTTER WITH THE SHALLOTS, HAZELNUTS, AND VINEGAR.  COMBINE WIHT A FORK AND SEASON WELL.

GREEN PEPPERCORN BUTTER

1 TABLESPOON GREEN PEPPERCORNS IN WATER, DRAINED
3 SHALLOTS, FINELY CHOPPED
1/2 CUP UNSALTED BUTTER, SOFTENED
1 TABLESPOON BRANDY
SALT AND BLACK PEPPER

POUND THE PEPPERCORNS USING A MORTAR AND PESTLE, OR WITH A FORK.  ADD THE SHALLOTS, BUTTER, AND BRANDY AND MIX WELL.  SEASON TO TASTE.

SUN DRIED TOMATO AND BASIL BUTTER

4 GARLIC CLOVES, FINELY CHOPPED
1/2 CUP UNSALTED BUTTER, SOFTENED
5-8 SUN DRIED TOMATOES IN OIL, DICED, PLUS 1/2 TSP OF THE OIL
3 TABLESPOON FINELY CHOPPED FRESH BASIL LEAVES
SALT AND BLACK PEPPER

COMBINE THE GARLIC WITH THE BUTTER AND SUN DRIED TOMATOES, THEN WORK IN THE BASIL AND SEASON WELL.

ROSEMARY MUSTARD BUTTER

1/2 CUP UNSALTED BUTTER, SOFTENED
1 TABLESPOON DIJON MUSTARD
2 GARLIC CLOVES, FINELY CHOPPED
2 TABLESPOONS CHOPPED FRESH ROSEMARY
SALT AND BLACK PEPPER

COMBINE THE BUTTER WITH THE OTHER INGREDIENTS AND SEASON TO TASTE.  USE WITH VEAL OR LAMB CHOPS.

RASPBERRY AND ROASTED GARLIC BUTTER

6 ROASTED GARLIC CLOVES, PEELED AND PUREED
1/2 CUP UNSALTED BUTTER, SOFTENED
25 FRESH RASPBERRIES, MASHED
DASH OF RASPBERRY VINEGAR
SALT AND BLACK PEPPER
 
COMBINE THE GARLIC WITH THE BUTTER.  MIX WELL, THEN WORK IN THE RASPBERRIES AND VINEGAR AND SEASON.

1 lrg clove garlic 
dash of Worcestershire
1/2 lb Roquefort cheese 
4Tblspns softened butter
2tsp dry mustard 1 steak

crush garlic with fork in small bowl, add cheese and butter, cream together well. 

flavor with rest of ingredients. 

grill steak as usual,
spread on top after flipping.
