                 From a Lithuanian grandma on the southwest side (not
                 mine--she would make only hot borscht):
                  
                 Cold Lithuanian Borscht
                  
                 -2 quarts buttermilk
                 -3 or 4 good sized beets
                 -large cucumber
                 -scant 1/2 cup chopped chives
                 -couple generous tablespoons baby dill, minced finely and
                 tough stalks removed
                 -4 hard-boiled eggs, coarsely chopped
                 -salt
                  
                 Boil beets in water until tender; may take up to hour
                 depending on size. Allow to cool. Peel these and then shred
                 them on the hash-brown thingee of a hand grater, or use
                 shredding disk in food processor or mandoline for similar
                 results. (What a mess esp. w/processor! I prefer hand
                 grater or mandoline; beets are quite tender.) Next, slice
                 cuke lengthwise and remove seeds with spoon; do them
                 through the hash-brown thingee also. Put shredded beets and
                 shredded cuke into cold buttermilk, all in large mixing
                 bowl. Add chopped chives and chopped dill and coarsely
                 chopped hard-boiled eggs. Add salt to taste. Chill
                 thoroughly and serve very cold. For whole peasant meal,
                 have boiled potatoes with good butter on the side. Enjoy.
                 Especially good in summer, and vegetarian also.
